Vinification The process starts by softly destalking and crushing the grapes then leaving them to macerate at 4°within 12 hours. This is followed by a gentle pressing, where the free-run must is separated from the refuse and clarified by settling. The resulting must is inoculated with selected yeasts and fermented in stainless steel tanks at 18°.
Ageing The obtained wine is placed in yeasts for about six months. This is followed by fining and filtration before bottling.
Colour Straw coloured of medium intensity.
Bouquet Wide and intense, with marked elder and jasmine flowery notes blended with persistent hints of tropical fruits such as pineapple, grapefruit and banana.
Flavour Full and rich. The palate is harmonious and persistent with notes of white and dry fruits.
Pairings Excellent as an aperitif, wonderful with starters, cheese, fish and white meat. Pairs all courses during summertime.
